30 second review: 15-min Vegan, by Katy Beskow

So I think having my spleen removed has turned me Vegan. Is that possible?

I will bore you with the ‘goes to get spleen removed, ends up with sepsis’ saga another time, but suffice to say, it has left this previously rabid carnivore turning green at the thought of eating meat.

I brought it up with my very Italian consultant last week and he just shrugged and said ‘eat what your body waaaannnts’. So Italian (I’m married to one, I’m allowed to say that).

So it’s left me in a bit of a foodie funk. To be fair, during my month-long stint in hospital I didn’t eat much at all and now I’m out in the Real World it’s almost like I’m pregnant (reader: I’m not) – I have really strong adversions to certain foods – namely meat and dairy – and just want to eat ALL THE GREEN FOOD.

So, I’m no doctor, but I’m pretty sure it’s my body’s way of saying, ‘Jeez, gives us a break will ya?’ – which would make sense. It’s been pumped full of enough antibiotics, morphine and other mid-altering painkillers to fell a small horse, so I’m sure it probably is craving a bit of Tenderstem broccoli, you know, for balance. Who knows, when I’m fully recovered I may very well be back into my ol’ steak chomping days but for now – I’m team plant-based.

My education thus far has been this:

I was all eye-rolly about buying into the whole ‘Vegan Cult’ of 2018 – but I was literally drawing a blank as to what to eat every day (I bloody hate tofu, so not that). Then this popped up on my Amazon book list. BINGO. Anything quick and easy has me sold (easy tiger).

Thus far it’s been fool-proof. No fancy-shmanzy weirdo ingredients (who has time to track down cashew cheese for god’s sake) and just great, QUICK breakfasts, lunches, dinners and sweet treats.

To give you a flavour, current winners are:

Almond butter morning cookies (5 ingredients! 12 minutes!)
Satay noodles (soooo easy and I can just fling in any ‘bottom of the fridge veg’ and the boys hoover it up)
Carrot and cardamon falafels (never made my own before but these are super speedy/easy)
Sweetcorn and black bean enchiladas (INSANE – we are eating these almost daily).
