So, next week is Country Bebe’s first birthday. I know, this year has flown by.
While we’re not throwing him a big party, there will be a few of his little friends, doting grandparents and general well-wishers dropping by and I thought I’d make a cake.
Cue a quick Pinterest search and some SERIOUS mother anxiety.

Now I am in a total flap about what to make; I was thinking carrot cupcakes with a simple cream cheese frosting (courtesy of the Hummingbird Bakery cookbook) to try and keep the refined sugar/e numbers to a minimum (Country Bebe needs no assistance in the energy stakes).
I thought they’d be fun baked in these, stacked up in a big tower (we had a cupcake display at our wedding so I thought continuing the tradition would be cute!)
Then sprinkled with these pale blue stars:
Pretty straight forward, right?
As all my baking is done at 10pm after bedtime, dinner, paperwork, blogging… simple is best.
